One of my favorite appetizers during the holidays is hummus on veggies. I like to change the flavor by putting in different items. See some of the options at the bottom.

Ingredients:
1 12oz can garbanzo beans
2 Cloves of garlic
1 Red bell pepper
2 Tablespoons extra virgin olive oil, extra for roasting garlic and pepper
2 Tablespoons tahini
Juice of 1 lemon
½ teaspoon of salt
Cayenne pepper to taste (for a kick)

Instructions:
Set oven to 500degree F. Peel garlic, slice red pepper lengthwise into 8 slices. Place the peppers skin side up and the garlic cloves on shallow baking sheet. Drizzle olive oil over the peppers and garlic. Broil for 5 minutes or so, until the garlic is browned and skin of peppers start to blister.

Drain 1/3 of the water from the can of garbanzo beans; pour the beans and remaining water into a food processor. Add olive oil, tahini, salt and lemon juice. Blend for one minute. Add roasted garlic and bell pepper, blend until well mixed. Add salt and cayenne pepper to taste. Blend until smooth.

You could make it with black beans rather than garbanzo beans
