Quinoa is one of my favorite grains. I am always trying different ways to make it unique and special.
Ingredients:

  • 1 cup quinoa, rinsed well
  • 3 cups orange juice
  • 1/2 cup raisins, dried currants, or dried cranberries
  • 1 Tablespoon lemon zest
  • 1 Tablespoon olive oil

Instructions:
Heat olive oil, add lemon zest and quinoa then saute until quinoa starts to heat and the aroma of lemons is strong. Add your dried fruit, stirring to coat.

Add orange juice, and steep until all liquid is gone. Fluff with a fork and serve as a side with a sour or salty dish. This makes a great breakfast too!
